My go-to rub mix

I'm not big on rubs when it comes to a lot of barbecue items. South Carolina barbecue classics—like pork shoulder and whole hog—are usually seasoned with nothing more than salt, and when it comes to ribs I tend to steer away from Memphis and down to Alabama and go with just salt and black pepper for seasoning.

When it comes to things like smoked chicken wings, though, a good rub can really add a layer of flavor. This is the formula I've settled on over the years, and I mix it in a big batch and keep it in my cabinet for months, since I tend to use it sparingly—more a generous sprinkle than a rub or a dredge.

Ingredients

  • 1 tablespoon black pepper
  • 1 tablespoon white pepper
  • 1 tablespoon granulated white sugar
  • 2 teaspoons cayenne pepper
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon brown sugar
  • 2 tablespoons paprika
  • 1 teaspoon dried mustard
  • 2 tablespoons salt
  • 1 teaspoon celery seed

Preparation

  1. 1Combine all the ingredients in a plastic container, put on the lid, and shake to blend.
